As an RD/Assistant Manager at the California Health & Longevity Institute, my role includes individual nutrition counseling (for weight loss, diabetes, disease prevention and longevity, pediatrics, sports nutrition, etc.). I am also lucky enough to be able to teach hands-on healthy cooking classes in our Wellness Kitchen. Here, our guests don aprons and cook a full, healthy meal that is entirely plant-based. We focus on things like how to make vegetables taste good, using grains like farro and barley, and what 4 ounces of protein looks like on a plate. I love love LOVE this part of my job, which has allowed me to expand my culinary knowledge. In addition to the counseling and cooking, there are numerous ongoing projects including our efforts to promote healthy school lunches in the local school districts.
